Delicious Tahini Fig Bars for a Healthy Snack Boost
Ingredients

- 1 cup old fashioned rolled oats
- ½ cup chopped dried figs
- ½ cup raw or toasted pepitas
- ½ cup tahini
- ⅓ cup honey
- 2 Tablespoons ground flaxseed
- 2 Tablespoons chia seeds
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon sea salt
- ¼ cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line a loaf pan with parchment paper, allowing some overhang for easy removal later.
- In a large bowl, combine the rolled oats, chopped dried figs, pepitas, tahini, honey, ground flaxseed, chia seeds, vanilla, cinnamon, and sea salt. Stir until well mixed.
- Transfer the mixture into the prepared loaf pan and press down firmly and evenly.
- Place the pan in the fridge for about 10-15 minutes.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals.
- Pour the melted chocolate over the pressed bar mixture and spread evenly.
- Chill in the fridge for about 30 minutes until the chocolate has hardened.
- Remove from the pan and cut into 8 equal bars.
- Store in the fridge for up to 1 week.
