Delicious Tahini Fig Bars for a Healthy Snack Boost


Ingredients

  • 1 cup old fashioned rolled oats
  • ½ cup chopped dried figs
  • ½ cup raw or toasted pepitas
  • ½ cup tahini
  • ⅓ cup honey
  • 2 Tablespoons ground flaxseed
  • 2 Tablespoons chia seeds
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Line a loaf pan with parchment paper, allowing some overhang for easy removal later.
  2. In a large bowl, combine the rolled oats, chopped dried figs, pepitas, tahini, honey, ground flaxseed, chia seeds, vanilla, cinnamon, and sea salt. Stir until well mixed.
  3. Transfer the mixture into the prepared loaf pan and press down firmly and evenly.
  4. Place the pan in the fridge for about 10-15 minutes.
  5. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals.
  6. Pour the melted chocolate over the pressed bar mixture and spread evenly.
  7. Chill in the fridge for about 30 minutes until the chocolate has hardened.
  8. Remove from the pan and cut into 8 equal bars.
  9. Store in the fridge for up to 1 week.
