Description

  • 4 medium sweet potatoes
  • Olive oil for coating
  • Coarse sea salt for seasoning
  • 1 to 1.5 pounds ground beef or turkey
  • 23 tbsp homemade taco seasoning
  • 1/2 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 1/4 cups tomato sauce
  • 1/3 cup chopped red onions
  • 1/3 cup chopped tomatoes
  • 1/3 cup guacamole
  • 1/2 cup sour cream (regular or dairy free)
  • Juice of 1/2 lime
  • Cilantro leaves for garnish
  • Jalapeño slices for garnish

Instructions

  1. Heat a skillet over medium heat with 1 tablespoon of olive oil. Add the diced onions and minced garlic; sauté for about 2 minutes until fragrant.
  2. Add the ground beef or turkey to the skillet. Brown the meat, stirring occasionally, for 8 to 9 minutes until fully cooked. Drain any excess fat from the pan.
  3. Stir in the tomato sauce and homemade taco seasoning. Reduce heat to low and let it simmer for 3 minutes to meld the flavors.
  4. Preheat your oven to 400°F (204°C). Line a large baking sheet with parchment paper or aluminum foil. Wash and dry the sweet potatoes thoroughly and poke several holes in each using a fork.
  5. Coat each sweet potato evenly with olive oil and sprinkle with coarse sea salt. Rub gently to ensure an even coating.
  6. Place the sweet potatoes on the prepared baking sheet and bake for 45-50 minutes or until tender when pierced with a fork. Alternatively, microwave by wrapping each potato in a paper towel, poking holes, and cooking for 4-6 minutes each.
  7. In a small bowl, combine the sour cream with fresh lime juice and mix well.
  8. Cut a slit lengthwise down the middle of each cooked sweet potato. Stuff generously with the prepared taco meat, then top with chopped tomatoes, red onions, and guacamole.
  9. Drizzle the lime-infused sour cream over each potato and garnish with cilantro leaves and jalapeño slices for added freshness and heat.
