This Szechuan-style spicy dumpling soup is a flavorful and comforting dish. It combines aromatic Szechuan peppercorns, savory soy sauce, spicy chili oil, and tender dumplings in a rich broth. It’s a simple yet satisfying meal, perfect for weeknights or upgrading frozen dumplings.
Ingredients
- For the Soup Broth:
- 6 cups low-sodium chicken broth or vegetable broth
- 1 tablespoon Szechuan peppercorns, lightly toasted and crushed
- 1 tablespoon chili oil, plus more for garnish
- 1 tablespoon soy sauce
- 1 tablespoon black vinegar or rice vinegar
- 2 teaspoons sesame oil
- 3 cloves garlic, minced
- 1-inch piece of ginger, peeled and minced
- 2 green onions, sliced, white and green parts separated
- 1 tablespoon gochujang (optional)
- Salt to taste
- For the Dumplings:

- 1/2 lb ground chicken or pork
- 1/4 cup finely chopped napa cabbage
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 2 green onions, finely chopped
- 1 teaspoon cornstarch
- Dumpling wrappers
- Option 2: Frozen Dumplings
- 18–20 frozen dumplings
- Optional Soup Add-ins:
- A handful of baby spinach or bok choy
- Cooked noodles
- Sliced mushrooms
- Tofu cubes
Instructions
- Prepare the dumplings: If making homemade dumplings, mix filling ingredients and spoon into wrappers. Seal and fold. If using frozen dumplings, take them directly from the freezer.
- Build the broth: Heat oil in a soup pot. Add white parts of green onion, garlic, ginger, and Szechuan peppercorns. Cook until fragrant. Add soy sauce, vinegar, sesame oil, chili oil, and gochujang (if using). Pour in broth and simmer for 10–15 minutes. Adjust salt.
- Cook the dumplings: Carefully add dumplings to the simmering broth. Cook for 5–7 minutes, or until they float and are cooked through.
- Add optional veggies: In the last few minutes of cooking, add spinach, bok choy, or mushrooms. If using cooked noodles, stir them in just before serving.
- Garnish and serve: Ladle the Szechuan spicy dumplings soup into bowls. Top with green onion tops and a drizzle of chili oil.
