Description
A delicious, low-carb Frozen Yogurt Bark made with Greek yogurt, mixed berries, and optional nuts, perfect for hot days and quick snacks.

- 2 cups Greek yogurt (unsweetened)
- 2 tablespoons sweetener (erythritol, monk fruit, or stevia)
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup chopped nuts (optional – almonds, pecans, or walnuts)
Instructions
- Line a baking sheet with parchment paper and set it on a flat surface that fits in your freezer.
- Mix 2 cups Greek yogurt with 2 tablespoons sweetener and 1 teaspoon vanilla until smooth and slightly glossy. Taste and adjust sweetener.
- Pour the yogurt mixture onto the parchment and spread it evenly into a roughly 9×9-inch rectangle, about 1/4–1/2 inch thick.
- Scatter 1 cup mixed berries and 1/4 cup chopped nuts (if using) over the yogurt, pressing gently so toppings adhere.
- Place the baking sheet in the freezer and freeze for at least 4 hours or until completely firm.
- Remove from the freezer, peel away the parchment, and break the bark into irregular pieces. Serve immediately or store.
