Sweet Potato Sheet Pan Nachos with Ground Turkey made with crispy roasted sweet potato rounds, seasoned turkey, melty cheese, and fresh toppings for an easy, flavor-packed sheet pan dinner.

- 2 large sweet potatoes (sliced into thin rounds (¼–⅜”))
- 1–2 tbsp olive oil
- ½ tsp salt
- ½ tsp paprika
- ½ tsp cumin
- ½ tsp chili powder
- Black pepper (to taste)
- 1 lb ground turkey
- 1 tbsp olive oil (if pan is dry)
- ½ small onion (finely diced (about 1/2 cup))
- 2 cloves garlic (minced)
- 1 packet of mild taco seasoning or use below
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- ¼ tsp oregano
- Salt + pepper to taste
- ⅓ cup salsa (or 2–3 tbsp tomato paste + splash broth)
- 1 cup shredded cheese (cheddar, jack, or Mexican blend)
- ½ cup black beans (drained and rinsed)
- ½ cup canned corn
- Sliced jalapeño
- Fresh cilantro
- Avocado
- Greek yogurt
- Lime wedges
Instructions
- Preheat oven to 400°F. Line a large sheet pan with parchment.
- Toss sweet potato rounds with oil, salt, paprika, cumin, chili powder, and black pepper. Arrange in a single layer. Bake 20–25 minutes, flipping halfway, until golden and tender.
- Meanwhile, heat a skillet over medium. Add a drizzle of oil, onion, and turkey. Sauté until browned, breaking up as it cooks. Add garlic, spices, salt, and pepper. Stir in salsa. Simmer 2–3 minutes until thickened.
- Once sweet potatoes are done, pile turkey on top, scatter beans/corn if using, and sprinkle cheese. Return to oven 5–7 minutes until melty and bubbly.
- Top with jalapeño, cilantro, avocado/guac, and Greek yogurt. Squeeze with lime before serving.
