- 2 tablespoons Olive or Vegetable Oil
- 12 oz Sweet Potatoes
- 1/2 large Red Onion
- 1 cup Brown Long Grain or Basmati Rice
- 1 teaspoon Cumin
- 1/2 teaspoon Cinnamon
- 1/8 teaspoon Allspice
- 1 handful Chopped Cilantro or Parsley
- 1/2 piece Lemon
Instructions
- Preheat the oven to 180°C (360°F).
- Peel and cube the sweet potatoes into bite-sized pieces and scatter them in a generously oiled baking dish.
- Slice the red onion into half-moons and add it to the baking dish.
- Drizzle with oil, season with salt and pepper, and roast for 35-40 minutes until tender.
- Boil 1 cup of brown rice in salted water for 25-30 minutes, or 8-10 minutes for white rice, then drain.
- Stir in the cumin, cinnamon, and allspice into roasted sweet potatoes and onions.
- Return to the oven for 1 minute to heighten spice flavor.
- Combine the cooked rice with the sweet potato mixture, fold in cilantro, and drizzle with lemon juice.
- Serve hot from the baking dish or in a serving bowl.
