  • 12 oz Sweet Potatoes
  • 1/2 large Red Onion
  • 1 cup Brown Long Grain or Basmati Rice
  • 1 teaspoon Cumin

  • 1/8 teaspoon Allspice
  • 1 handful Chopped Cilantro or Parsley
  • 1/2 piece Lemon

Instructions

  1. Preheat the oven to 180°C (360°F).
  2. Peel and cube the sweet potatoes into bite-sized pieces and scatter them in a generously oiled baking dish.
  3. Slice the red onion into half-moons and add it to the baking dish.
  4. Drizzle with oil, season with salt and pepper, and roast for 35-40 minutes until tender.
  5. Boil 1 cup of brown rice in salted water for 25-30 minutes, or 8-10 minutes for white rice, then drain.
  6. Stir in the cumin, cinnamon, and allspice into roasted sweet potatoes and onions.
  7. Return to the oven for 1 minute to heighten spice flavor.
  8. Combine the cooked rice with the sweet potato mixture, fold in cilantro, and drizzle with lemon juice.
  9. Serve hot from the baking dish or in a serving bowl.
