Description
A cozy and comforting holiday side dish featuring layers of sweet potatoes and tart cranberries baked with creamy cheeses and a crispy topping.

- 3 large sweet potatoes (about 2 pounds / 900g), peeled and thinly sliced
- 1 cup fresh cranberries (100g) or frozen, added frozen
- 1 ½ cups shredded sharp cheddar cheese (150g)
- ½ cup shredded Gruyère cheese (50g) (optional)
- 1 cup heavy cream (240ml)
- 3 tablespoons unsalted butter (45g)
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 2 tablespoons brown sugar
- Salt to taste (preferably kosher salt)
- Black pepper to taste
- ½ cup panko breadcrumbs (50g)
Instructions
- Preheat oven to 375°F (190°C). Butter a 9×13-inch baking dish generously.
- Slice sweet potatoes into thin, even rounds about 1/8 inch (3mm) thick.
- In a small bowl, toss cranberries with brown sugar to soften tartness.
- In a saucepan over low heat, warm heavy cream, butter, minced garlic, and fresh thyme until butter melts and mixture is fragrant (about 3-4 minutes). Do not boil.
- Layer sweet potatoes on the bottom of the baking dish, overlapping slightly. Sprinkle some cranberry mixture over the potatoes, then add shredded cheddar and Gruyère cheese. Repeat layering until ingredients are used, finishing with a cheese layer on top.
- Slowly pour the warm cream mixture evenly over the layered potatoes and cranberries.
- Sprinkle panko breadcrumbs over the top.
- Cover the dish loosely with foil and bake for 30 minutes.
- Remove foil and bake for another 15-25 minutes until the top is golden brown and bubbling and sweet potatoes are tender when pierced with a fork.
- Let the gratin rest for about 10 minutes before serving to set.

- Can be prepared ahead of time and baked just before serving.
- Serves well with holiday meals.
