Buttery, soft cookie shells filled with fluffy cream cheese frosting and sprinkles, perfect for parties and celebrations.

- 3/4 cup salted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sprinkles (optional)
- For the frosting: 2 ounces cream cheese, softened
- 1/4 cup butter, softened
- 3 cups powdered sugar
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- Pink or red food coloring gel (optional)
Instructions
- Preheat the oven to 350°F. Grease two regular muffin pans with nonstick spray.
- Cream together butter and sugar with an electric mixer until light and fluffy, 2–3 minutes. Scrape down the bowl.
- Add egg, vanilla, and almond extract; beat until smooth.
- Whisk together flour, baking powder, and baking soda in a separate bowl.
- Add dry ingredients to wet ingredients and mix until a soft dough forms. Don’t over-mix.
- Use about 2 tablespoons of dough per cup. Press dough into the bottom and sides of each muffin cup to form a shell.
- Bake for 12 minutes. Cool for 15 minutes. Press into the center to form a cup shape and let cool completely.
- To make the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and milk. Beat until fluffy and adjust consistency as needed.
- Pipe frosting into cooled cookie cups and sprinkle if desired.
