Description

Buttery, soft cookie shells filled with fluffy cream cheese frosting and sprinkles, perfect for parties and celebrations.


Ingredients

  • 3/4 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles (optional)
  • For the frosting: 2 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Instructions

  1. Preheat the oven to 350°F. Grease two regular muffin pans with nonstick spray.
  2. Cream together butter and sugar with an electric mixer until light and fluffy, 2–3 minutes. Scrape down the bowl.
  3. Add egg, vanilla, and almond extract; beat until smooth.
  4. Whisk together flour, baking powder, and baking soda in a separate bowl.
  5. Add dry ingredients to wet ingredients and mix until a soft dough forms. Don’t over-mix.
  6. Use about 2 tablespoons of dough per cup. Press dough into the bottom and sides of each muffin cup to form a shell.
  7. Bake for 12 minutes. Cool for 15 minutes. Press into the center to form a cup shape and let cool completely.
  8. To make the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and milk. Beat until fluffy and adjust consistency as needed.
  9. Pipe frosting into cooled cookie cups and sprinkle if desired.
