Crispy, cheesy, and packed with flavor, these Stuffed Potato Skins are your new favorite appetizer or side.
Ingredients

- 4 medium russet potatoes
- 1 cup shredded sharp cheddar cheese
- 6 slices cooked bacon, chopped
- 1/2 cup sour cream
- 3 green onions, sliced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes clean and prick them with a fork. Bake for 45–50 minutes or until tender.
- Let potatoes cool slightly. Slice in half lengthwise. Scoop out most of the flesh, leaving a 1/4-inch layer inside the skins.
- Brush both sides of potato skins with olive oil. Season with salt and pepper. Place cut side down on a baking sheet and bake for 10 minutes.
- Flip and bake an additional 5–10 minutes until crisp and golden.
- Remove from oven. Fill each skin with shredded cheese and chopped bacon.
- Return to oven for 5 minutes until cheese melts and bubbles.
- Top with sour cream and sliced green onions. Serve hot and crispy.
