  • 2 tablespoons vegetable oil

  • 1 cup red bell pepper
  • 1 cup green beans
  • 1 cup fresh basil leaves
  • 4 pieces Thai bird chilies
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 juice lime
  • 1 cup chicken, shrimp, or tofu

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Sauté minced garlic for about 30 seconds until fragrant.
  4. Toss in sliced red bell pepper and trimmed green beans. Stir-fry for 2-3 minutes.
  5. Add your choice of chicken, shrimp, or tofu and cook until fully cooked through.
  6. Mix soy sauce, oyster sauce, fish sauce, and sugar in a small bowl.
  7. Combine the cooked noodles with the veggies in the skillet, pouring the sauce mixture over.
  8. Stir in fresh basil leaves and sliced Thai bird chilies, cooking for an additional minute.
  9. Squeeze fresh lime juice over the dish and toss everything to combine.
  10. Serve immediately, garnishing with extra basil if desired.
