Instructions
- Start by letting butter fully soften at room temperature for about an hour.
- Finely chop your fresh strawberries and pat them to remove moisture.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, cream softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla until just combined.
- Gradually add the flour mixture, mixing on low speed just until combined.
- Gently fold in the chopped strawberries with a spatula.
- Cover the bowl with plastic wrap and chill for at least 2 hours.
- Preheat your oven to 350°F and line your baking sheets with parchment paper.
- Scoop out rounded tablespoons of dough, roll them in extra sugar, and place them on your baking sheets.
- Bake for 11-13 minutes, or until the edges are golden brown.
- Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
