  1. Whisk together flour, baking soda, baking powder, and salt. In a separate bowl, cream softened butter and granulated sugar until light and fluffy (3-5 mins). Beat in eggs, then vanilla extract and optional almond extract until well combined. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix.
  2. Gather dough into a ball, divide in half, and flatten each into a disk. Wrap tightly in plastic wrap and refrigerate for at least 1 hour, preferably 2 hours or overnight. Chilling is crucial for perfectly shaped cookies.
  3. Preheat oven to 375°F (190°C) and line baking sheets with parchment. On a lightly floured surface, roll out one disk of chilled dough to ¼ inch thickness. Cut into 2×3-inch rectangles.
