Irresistible Strawberry Kiss Cookies

- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg, at room temperature
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 2 cups + 2 tbsp (280g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 package (3 oz) strawberry-flavored gelatin mix
- 1/4 cup powdered sugar, for dusting
- 24–30 chocolate kiss candies, unwrapped
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter and granulated sugar on medium speed for 2–3 minutes until light and fluffy.
- Beat in the egg, vanilla, and almond extract (if using) until combined.
- Sprinkle the strawberry gelatin powder over the wet mixture and beat until evenly mixed and the batter turns soft pink.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry mix to the wet mixture on low speed. Mix until a soft, cohesive dough forms.
- Scoop about 1 tablespoon of dough and roll into smooth balls. Place them on a lined baking sheet and chill for at least 1 hour.
- Arrange chilled dough balls about 2 inches apart on the prepared sheet. Bake for 11–13 minutes, until the edges are set.
- Remove from the oven and let cookies sit for 2 minutes. Dust each cookie lightly with powdered sugar and then gently press a chocolate kiss into the center.
- Cool completely on a wire rack.
