- 180 g dry rice noodles
- ¼ cup sliced scallions
- ½ medium red onion
- ½ cup sliced bell peppers
- ½ cup purple cabbage
- 2 tbsp sesame oil
- 2 ½ tbsp peanut butter
- 3 cloves garlic
- 2 tbsp maple syrup
- 4 tbsp soy sauce
- 1 tsp sriracha
- ½ tbsp cornstarch
- 1 tbsp room temperature water
- Cilantro
- Sesame seeds
Instructions
- Soak the Noodles: Place the dry rice noodles in a large heatproof bowl. Pour boiling water over them until completely soaked. Gently use chopsticks to separate the noodles. Let them sit until soft, then drain.
- Mix the Sauce: In a bowl, combine all the sauce ingredients: peanut butter, garlic, maple syrup, soy sauce, sriracha, and sesame oil. Stir until smooth.
- Prepare the Slurry: In a small bowl, mix the cornstarch with the room temperature water until it forms a smooth slurry.
- Sauté the Vegetables: Heat sesame oil in a large pan over medium heat. Add the sliced onions, scallions, and bell peppers, sautéing for about 3-4 minutes.
- Add Tofu and More Veggies: If using tofu, add it along with any other vegetables desired. Sauté until warmed through.
- Combine Noodles and Sauce: Add the soaked noodles to the pan and pour the sauce mixture over them. Toss to coat evenly.
- Heat and Thicken: Cook on medium to high heat for another 3-5 minutes, stirring in the cornstarch slurry until the sauce thickens.
- Serve and Garnish: Transfer noodles to a serving dish. Top with sesame seeds and fresh cilantro.
Notes
- These can be swapped with your favorite noodles for a different texture.
- Add purple cabbage for color and crunch.
- Sriracha is optional for spiciness.
