  • ¼ cup sliced scallions
  • ½ medium red onion
  • ½ cup sliced bell peppers
  • ½ cup purple cabbage
  • 2 tbsp sesame oil
  • 2 ½ tbsp peanut butter
  • 3 cloves garlic
  • 2 tbsp maple syrup
  • 4 tbsp soy sauce
  • 1 tsp sriracha
  • ½ tbsp cornstarch
  • 1 tbsp room temperature water
  • Cilantro
  • Sesame seeds

Instructions

  1. Soak the Noodles: Place the dry rice noodles in a large heatproof bowl. Pour boiling water over them until completely soaked. Gently use chopsticks to separate the noodles. Let them sit until soft, then drain.
  2. Mix the Sauce: In a bowl, combine all the sauce ingredients: peanut butter, garlic, maple syrup, soy sauce, sriracha, and sesame oil. Stir until smooth.
  3. Prepare the Slurry: In a small bowl, mix the cornstarch with the room temperature water until it forms a smooth slurry.
  4. Sauté the Vegetables: Heat sesame oil in a large pan over medium heat. Add the sliced onions, scallions, and bell peppers, sautéing for about 3-4 minutes.
  5. Add Tofu and More Veggies: If using tofu, add it along with any other vegetables desired. Sauté until warmed through.
  6. Combine Noodles and Sauce: Add the soaked noodles to the pan and pour the sauce mixture over them. Toss to coat evenly.
  7. Heat and Thicken: Cook on medium to high heat for another 3-5 minutes, stirring in the cornstarch slurry until the sauce thickens.
  8. Serve and Garnish: Transfer noodles to a serving dish. Top with sesame seeds and fresh cilantro.

Notes
