- 2 cups chopped strawberries
- 2 cloves chopped garlic
- 2/3 cup chopped red onion
- Neutral vegetable oil, for sautéing
- 2 tablespoons water
- 4 tablespoons maple syrup
- 2 tablespoons apple cider vinegar
- 2 teaspoons chipotle chili powder
- 2 teaspoons hot paprika or cayenne pepper
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon salt
Instructions
- In a saucepot, add a drizzle of neutral vegetable oil and bring to medium heat. Add the chopped red onion and sauté until softened, approximately five minutes.
- Incorporate the chopped garlic and sauté until fragrant, less than a minute. Ensure garlic does not burn.
- Add the strawberries and water, stir to combine. Simmer, covered, on medium heat for 5 minutes.
- While maintaining medium heat, stir in the salt, spices, apple cider vinegar, and maple syrup. Simmer uncovered for 7 to 8 minutes.
- Remove the pot from heat and allow the mixture to cool completely before transferring to a blender.
- Transfer the cooled mixture to a blender and process until the barbecue sauce is perfectly smooth.
- Serve and enjoy your spicy strawberry barbecue sauce.
