- 3/4 pound thinly sliced beef ribeye or sirloin
- 1/2 cup napa cabbage kimchi, chopped
- 1/2 small onion, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 2 slices provolone or mozzarella cheese
- 2 long sandwich rolls or hoagie buns
- 1 teaspoon gochujang (Korean red pepper paste) (optional)
- Optional garnish: sesame seeds, sliced green onions
Instructions
- In a bowl, mix beef with soy sauce, sesame oil, and sugar. Marinate 10–15 minutes.
- Heat a skillet over medium-high heat and sauté onions until soft and lightly caramelized.
- Add marinated beef and cook 2–3 minutes until browned and just cooked through.
- Stir in chopped kimchi and gochujang (if using). Cook 1 minute to combine flavors.
- Turn off heat, place cheese over meat, cover, and let melt for 1 minute.
- Lightly toast rolls, then fill with the beef-kimchi mixture.
- Garnish with green onions and sesame seeds if desired. Serve hot.
