  • 3/4 pound thinly sliced beef ribeye or sirloin
  • 1/2 cup napa cabbage kimchi, chopped
  • 1/2 small onion, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 slices provolone or mozzarella cheese
  • 2 long sandwich rolls or hoagie buns
  • 1 teaspoon gochujang (Korean red pepper paste) (optional)
  • Optional garnish: sesame seeds, sliced green onions

Instructions

  1. In a bowl, mix beef with soy sauce, sesame oil, and sugar. Marinate 10–15 minutes.
  2. Heat a skillet over medium-high heat and sauté onions until soft and lightly caramelized.
  3. Add marinated beef and cook 2–3 minutes until browned and just cooked through.
  4. Stir in chopped kimchi and gochujang (if using). Cook 1 minute to combine flavors.
  5. Turn off heat, place cheese over meat, cover, and let melt for 1 minute.
  6. Lightly toast rolls, then fill with the beef-kimchi mixture.
  7. Garnish with green onions and sesame seeds if desired. Serve hot.
