  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh jalapenos (seeds removed for less heat)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • Salt and black pepper to taste
  • Optional toppings: cooked bacon bits, extra shredded cheese, fresh cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes.
  3. Add minced garlic and chopped jalapenos and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pot.
  5. Return the chicken to the pot. Reduce heat to low, cover, and simmer for 15 minutes, or until chicken is cooked through.
  6. Remove chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  7. Stir in heavy cream, cream cheese, cheddar cheese, and Monterey Jack cheese. Stir until the cheeses are melted and the soup is creamy.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with optional toppings like bacon bits, extra cheese, or cilantro.
