Ingredients
Scale
- For the Marinade:
- 2 pounds chicken (thighs, breasts, or wings)
- 1/4 cup fresh lime juice (about 2–3 limes)
- 2 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- For the Honey Lime Glaze:
- 1/3 cup honey
- 1/4 cup fresh lime juice
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1–2 teaspoons red pepper flakes (adjust to taste)
- 1 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- Optional Garnishes:
- Fresh cilantro, chopped
- Lime wedges for serving
- Sliced green onions
- Sesame seeds
Instructions
- Prepare the marinade: In a large bowl, whisk together lime juice, soy sauce, minced garlic, olive oil, cumin, smoked paprika, black pepper, and salt until well combined.
- Marinate the chicken: Place chicken pieces in a large zip-top bag or shallow dish. Pour marinade over chicken, ensuring all pieces are coated. Marinate for 30 minutes at room temperature or 2-4 hours in refrigerator.
- Make the glaze: In a small saucepan, combine honey, lime juice, soy sauce, rice vinegar, garlic, red pepper flakes, and ginger. Bring to a gentle simmer over medium heat. Create a cornstarch slurry by whisking cornstarch with water, then slowly add to the simmering mixture while stirring. Cook for 1-2 minutes until thickened. Remove from heat.
- Cook the chicken: Heat a large skillet over medium-high heat. Remove chicken from marinade and cook according to cut: thighs 6-7 minutes per side, breasts 5-6 minutes per side, wings 4-5 minutes per side, until internal temperature reaches 165°F.
- Glaze and finish: Reduce heat to low. Brush or spoon glaze over cooked chicken pieces. Allow to bubble and caramelize for 1-2 minutes, turning to coat evenly.
- Rest and serve: Remove from heat and let rest 2-3 minutes. Garnish with fresh cilantro, green onions, and serve with lime wedges.
Notes
- Heat Level: Adjust red pepper flakes to taste – start with 1/2 teaspoon for mild heat, up to 2 teaspoons for extra spicy.
- Best Cuts: Chicken thighs deliver the juiciest results due to higher fat content, but any cut works beautifully.
- Make Ahead: Chicken can be marinated up to 24 hours in advance. Glaze can be prepared and refrigerated for up to 1 week.
- Storage: Leftovers keep in refrigerator for 4 days. Reheat gently in oven at 350°F for 10-15 minutes.
- Gluten-Free: Use tamari instead of soy sauce for gluten-free version.
- Serving Suggestions: Delicious over rice, in lettuce wraps, or with roasted vegetables.
