  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz linguine
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded cheddar
  • 1/4 cup grated parmesan
  • 1/4 cup shredded provolone
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley, for garnish

Instructions

  1. Cook linguine according to package directions. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Season chicken slices with salt and black pepper.
  3. Melt 2 tbsp butter in a large skillet over medium heat. Cook chicken until golden brown and fully cooked, about 5-6 minutes per side. Remove chicken from skillet and set aside.
  4. Melt the remaining 2 tbsp butter in the same skillet. Add minced garlic and red pepper flakes, and sauté for about 30 seconds to 1 minute until fragrant.
  5. Pour in the heavy cream. Gradually stir in the shredded mozzarella, cheddar, parmesan, and provolone until the cheeses are melted and the sauce is smooth.
  6. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  7. Add the cooked linguine to the skillet with the cheese sauce and toss until fully coated.
  8. Slice the cooked chicken and arrange it over the linguine.
  9. Garnish with chopped fresh parsley before serving.
