- 2 tablespoons olive oil
- 1 lb boneless skinless chicken breasts, diced
- 2 tablespoons Cajun seasoning
- 1 medium onion, diced
- 1 whole bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup corn, fresh or frozen

Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken and sprinkle with Cajun seasoning; cook until browned.
- Remove chicken and set aside; sauté onion and bell pepper in the same pan.
- Add minced garlic and cook until fragrant.
- Stir in diced tomatoes, chicken broth, and corn; bring to a simmer.
- Add linguine, ensuring it’s submerged; cover and cook until al dente.
- Reduce heat, stir in heavy cream, and return chicken to the pan.
- Mix well and season with salt and pepper to taste.
- Garnish with parsley and serve with Parmesan cheese.
