Ingredients
- 8 oz naengmyeon noodles (buckwheat and sweet potato starch)
- Ice cubes for chilling noodles
- 3 tablespoons gochujang (Korean red chili paste)
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated garlic
- 1 teaspoon Korean plum extract or honey (optional)
- 1 teaspoon toasted sesame seeds
- 1 hard-boiled egg, halved
- ½ cucumber, julienned
- ¼ Asian pear or apple, thinly sliced
- ¼ cup pickled radish (mu or danmuji), sliced
- Extra sesame seeds and sliced green onions for garnish
Instructions
- Prepare the Gochujang Sauce: In a small mixing bowl, whisk together gochujang, rice vinegar, sugar, soy sauce, sesame oil, garlic, and plum extract or honey (if using). Stir until smooth. Add sesame seeds and mix. Set aside.
- Boil the Noodles: Bring a large pot of water to a boil. Add naengmyeon noodles and cook for 3 to 5 minutes, stirring occasionally.
- Drain and Rinse Noodles: Immediately drain the cooked noodles and rinse under cold running water. Gently rub them to remove excess starch. Transfer to a bowl with ice water to chill.
- Prep the Toppings: While noodles chill, slice cucumber and pear/apple into thin matchsticks. Slice pickled radish and peel/halve the hard-boiled egg.
- Toss the Noodles: Drain the chilled noodles well. Transfer to a mixing bowl and add the prepared gochujang sauce. Toss thoroughly until evenly coated.
- Assemble and Serve: Divide the sauced noodles between two bowls. Arrange toppings: cucumber, pear/apple, pickled radish, and egg half. Add ice cubes if desired. Garnish with extra sesame seeds and sliced green onions. Serve immediately.
