Delicious Spanish Churro Pancakes: A Sweet Breakfast Treat!

- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup granulated sugar (for churro coating)
- 1 tablespoon cinnamon (for churro coating)
- Butter or oil (for greasing skillet)
- Chocolate sauce (for serving)
Instructions
- In a large mixing bowl, combine 1 cup of all-purpose flour, 2 teaspoons of baking powder, 2 tablespoons of granulated sugar, and 1 teaspoon of cinnamon. Mix well.
- In a separate bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Pour this mixture into the dry ingredients and stir until just combined; don’t overmix.
- Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- In a shallow dish, mix 1/4 cup of granulated sugar and 1 tablespoon of cinnamon. Once the pancakes are cooked, immediately coat them in the cinnamon-sugar mixture.
- Stack the churro pancakes on a plate, drizzle with chocolate sauce, and enjoy with a side of fresh fruit or whipped cream if desired.
