- 20 ounces Frozen peaches
- 1 cup Granulated sugar
- 1 cup Brown sugar
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Almond extract
- 1/2 tablespoon Cinnamon
- 1/2 teaspoon Nutmeg
- 2 teaspoons Corn starch
- 1 teaspoon Cream of tartar
- 1/2 stick Unsalted butter
- 2 tablespoons Water
- 1 teaspoon Fresh lemon juice
- 2 cups All-purpose flour
- 1/2 cup Granulated sugar
- 1/2 cup Brown sugar
- 2 teaspoons Baking powder
- 1/2 tablespoon Cinnamon
- 1 stick Unsalted butter
- 1/4 cup Boiling hot water
- 1/2 teaspoon Salt
- 3 tablespoons Granulated sugar (for sprinkling on top)
Instructions
- Preheat your oven to 375°F.
- Prepare the baking dish by spraying a 9×13 inch pan with non-stick spray. Layer in the frozen peaches, both sugars, vanilla and almond extracts, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice.
- Combine all the peach filling ingredients thoroughly. Cover the dish with foil and let it bake in the oven for 20 minutes.
- Mix the all-purpose flour, both sugars, baking powder, salt, and 1/2 tablespoon of cinnamon in a bowl.
- Cut the cold stick of butter into the flour mixture until it resembles coarse meal.
- Stir in the boiling hot water until just combined.
- Layer the peach filling with the cobbler dough mixture, leaving spaces between spoonfuls.
- Sprinkle the remaining sugar and cinnamon over the dough.
- Bake uncovered for an additional 30-45 minutes, or until the crust turns golden brown.
