Description
Soft and Sweet Linzer Cookies are delicate, buttery sandwich cookies filled with sweet jam and lightly dusted with powdered sugar. They are perfect for holidays, Valentine’s Day, or special occasions.

- 2 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 3/4 cup raspberry or strawberry jam
- Powdered sugar, for dusting
Instructions
- In a bowl, whisk together all-purpose flour, almond flour, salt, and cinnamon.
- In another bowl, beat butter and sugar until light and fluffy.
- Add egg, vanilla, and almond extract; mix until combined.
- Gradually add dry ingredients and mix until dough forms.
- Divide dough into two discs, wrap, and chill for 30–45 minutes.
- Preheat oven to 350°F (175°C).
- Roll dough to 1/8-inch thickness and cut into shapes. Cut centers out of half the cookies.
- Place cookies on a lined baking sheet.
- Bake for 9–11 minutes, until edges are lightly golden.
- Cool completely.
- Dust cut-out cookies with powdered sugar.
- Spread jam on solid cookies and sandwich with the cut-out cookies.

- Use your favorite jam for filling.
- Store cookies in an airtight container.
