Delicious Snowy Coconut Dream Cupcakes with a silky cream cheese frosting studded with coconut truffles, perfect for brunch or dessert.

- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ cup coconut milk
- 2 cups powdered sugar
- 8 oz cream cheese, softened
- 1 teaspoon coconut extract
- ½ cup shredded coconut
- 12 coconut truffles or white chocolate truffles
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- Whisk flour, baking powder, and salt in a bowl; set aside.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy (about 3–4 minutes).
- Beat in eggs one at a time, scraping the bowl, then add vanilla.
- Alternate adding dry ingredients and coconut milk in three parts, mixing until just combined.
- Divide batter evenly among liners, filling three-quarters full. Bake 18–22 minutes or until a toothpick comes out clean.
- Cool cupcakes in the tin 5 minutes, then transfer to a rack to cool completely before frosting.
- For the frosting: beat softened cream cheese until smooth, gradually add powdered sugar and beat until fluffy. Stir in coconut extract.
- Pipe or spread frosting onto cooled cupcakes, sprinkle with shredded coconut, and place one truffle in the center of each.
- Chill 15–20 minutes to set frosting before serving.
