- 6 bone-in or boneless chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Cream for extra richness (optional)
- Sliced mushrooms (optional)
Instructions
- Mix garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub evenly over the chicken thighs.
- Heat oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
- Melt butter in the same pan. Sauté onions until soft, then add garlic for 30 seconds.
- Add flour and stir for 1–2 minutes to remove raw flour taste.
- Slowly whisk in chicken broth until smooth and lump-free.
- Add paprika, thyme, salt, and pepper. Simmer for 2–3 minutes.
- Return chicken to the skillet, nestle into the gravy, cover, and simmer on low 25–35 minutes.
- Adjust seasoning and serve with plenty of gravy over potatoes, rice, or vegetables.
