Ingredients

  • 2 roasted red bell peppers

  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Add the roasted red peppers, lentils, vegetable broth, smoked paprika, and cumin.
  3. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are tender.
