- 1 (3-5 pound) whole body chicken
- 1 Tbsp garlic powder
- 1 tsp paprika
- 1 tsp ground ginger
- 1 tsp onion powder
- 1 tsp dried rosemary
- 1 tsp sea salt
- ½ tsp ground black pepper
Instructions
- Remove the chicken from its packaging, discard any giblets from the cavity, and pat the entire bird dry with paper towels.
- Combine the garlic powder, paprika, ground ginger, onion powder, dried rosemary, sea salt, and black pepper in a small bowl. Sprinkle this mixture evenly over the chicken.
- For enhanced flavor and juiciness, refrigerate the rubbed chicken uncovered for 12 to 24 hours.
- Heat your smoker or pellet grill to 225°F.
- Place the chicken on the smoker rack breast-side down or up according to your preference. Let it smoke for 3 to 4 hours.
- Insert the thermometer probe into the thickest parts of the thigh and breast. The chicken should reach 165°F before removing it from the smoker.
- If the chicken hasn’t reached the safe temperature after 3 hours, raise your smoker’s heat to 375°F.
- Transfer the smoked chicken to a rimmed baking sheet and allow it to rest for at least 15 minutes.
- When the chicken’s internal temperature reaches approximately 125 to 130°F, increase the smoker temperature to 500°F for the final 8 to 15 minutes.
- Slice and serve the smoked whole chicken with your favorite side dishes.
