Ingredients

- 1 smoked tongue
- 8 cups beef broth
- 2 onions, quartered
- 3 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, smashed
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1 tablespoon fresh thyme
- salt to taste
Instructions
- In a large pot, combine beef broth, smoked tongue, onions, carrots, celery, garlic, bay leaf, peppercorns, and thyme.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove the smoked tongue and let it cool before slicing.
- Strain the broth and return to the pot. Adjust seasoning with salt as needed.
- Add sliced tongue back into the broth and serve hot.
