Description

  • ½ cup all purpose flour
  • ½ cup whole wheat flour (can substitute all purpose flour)
  • ¼ cup avocado oil (or neutral oil of choice)
  • ¼ cup cold water
  • 1 ½ tbsp everything bagel seasoning
  • 5 large eggs
  • 1 cup milk of choice (unsweetened almond milk, oat milk, whole milk, etc.)
  • 1 tsp dried dill (freeze-dried recommended)
  • ¼ tsp fine sea salt
  • 1 tbsp capers, chopped
  • ½ cup chopped tomatoes (about 1 roma tomato)
  • 2 oz cream cheese or goat cheese
  • 4 oz smoked salmon, torn into 1 to 2-inch pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 9 or 10-inch round pie dish with cooking spray to prevent sticking.
  2. In a medium bowl, stir together the all purpose flour, whole wheat flour, and everything bagel seasoning. In a separate small bowl or liquid measuring cup, whisk together the avocado oil and cold water until the mixture thickens slightly. Pour this liquid into the flour mixture and mix gently with a wooden spoon until just combined to form a dough.
  3. Shape the dough into a ball and then press it evenly into the pie dish using your fingertips, spreading it up the sides to create the crust. Optionally, roll out the dough with a rolling pin before placing it in the pan for an even thickness.
  4. In a medium mixing bowl, whisk together the eggs, milk, dried dill, and sea salt until smooth. Fold in the chopped capers and chopped tomatoes. Pour this mixture carefully into the unbaked pie crust.
  5. Dot the top of the filling evenly with small pieces of cream cheese or goat cheese. Then scatter the torn smoked salmon pieces over the top uniformly.
  6. Place the quiche in the preheated oven and bake for 53 to 55 minutes, or until the filling has set completely. If you use cream or whole milk, it might be done slightly earlier—check for firmness in the center.
  7. Allow the quiche to cool for about 15 minutes before slicing carefully into 8 pieces. Serve warm or at room temperature and enjoy!
