Flavorful smoked chicken wings with a crispy skin, seasoned with a blend of spices and baked to perfection over indirect heat in a smoker.

- 4 pounds chicken wings
- 2 tablespoons baking powder
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon ground black pepper
- ¼ teaspoon cayenne pepper
- BBQ sauce or Buffalo sauce, for tossing (optional)
Instructions
- If the wings are whole, split them into flats and drumettes by removing the wing tips at the joint, then cutting through the elbow joint to separate the drumette from the flat. Use firm pressure at the soft spots for clean separation.
- Place the wings in a large zip-top bag and sprinkle with baking powder. In a small bowl, mix salt, garlic powder, onion powder, chili powder, black pepper, and cayenne pepper. Add the seasoning mix to the bag, seal, and toss to coat the wings evenly. Let them rest while preparing the smoker.
- Preheat your smoker for indirect heat at 250°F using lump charcoal and apple wood chunks. Place the wings directly on the grill grates away from direct heat, close the lid, and smoke for 30 minutes to infuse smoky flavor and begin cooking the wings through.
- Increase the heat to 425°F on the hot zone of your smoker if it doubles as a grill. If not, transfer the wings to a preheated gas grill at 425°F. Cook for a few minutes on each side, flipping as needed, until the wings reach an internal temperature of 175°F and the skin is crispy.
- Remove wings from the heat and let them rest for 5 minutes. Serve them plain or toss with warmed BBQ or Buffalo sauce, according to your preference.
