Description

This Pulled Beef Sandwich recipe features tender, slow-cooked beef chuck roast shredded and simmered in a flavorful homemade barbecue sauce.


Ingredients

  • 1 boneless beef chuck roast (3 pounds)
  • 11/2 cups ketchup
  • 1/4 cup packed brown sugar
  • 1/4 cup barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 1 teaspoon liquid smoke (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 12 sandwich buns, split
  • Optional: Sliced onions
  • Optional: Dill pickles
  • Optional: Pickled jalapenos

Instructions

  1. Cut the beef chuck roast in half to fit your slow cooker. For enhanced flavor, optionally brown the beef in a hot skillet before transferring it to a 3- or 4-quart slow cooker to build a rich crust.
  2. In a small bowl, whisk together ketchup, brown sugar, barbecue sauce, Worcestershire sauce, Dijon mustard, liquid smoke (if using), salt, garlic powder, and pepper until smooth and well blended.
  3. Pour the prepared sauce over the beef in the slow cooker. Cover and cook on low heat for 8 to 10 hours until the meat is very tender and easy to shred.
  4. Remove the beef from the slow cooker and let it cool slightly. Skim excess fat from the cooking liquid. Using two forks, shred the beef into bite-sized pieces.
  5. Return the shredded beef to the slow cooker with the remaining cooking liquid. Cover and cook for an additional 15 minutes on low to warm through and allow flavors to meld.
  6. Use a slotted spoon to drain excess liquid from the beef. Spoon about 1/2 cup of the pulled beef onto each sandwich bun. Optionally top with sliced onions, dill pickles, and pickled jalapenos. Lightly toast the buns beforehand for better texture and to prevent sogginess.
