Slow Cooker Chicken Stew is a comforting dish that fills your home with the aroma of a hearty family dinner.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 4 medium Yukon Gold potatoes, peeled and cut into -inch chunks
  • 3 large carrots, peeled and cut into 1-inch rounds
  • 3 stalks celery, sliced into 1-inch pieces
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 3 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • Fresh flat-leaf parsley, chopped, for garnish

Instructions

  1. Optional — Sear the Chicken for Deeper Flavor
  2. Pat the chicken thighs dry and season with salt and black pepper. Heat olive oil in a skillet and sear chicken for 3 minutes per side.
  3. Load the Slow Cooker
  4. Add onion, garlic, potato, carrot, and celery to the slow cooker. Stir tomato paste and Worcestershire sauce into chicken broth and pour over the chicken and vegetables.
  5. Slow Cook
  6. Cover and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours.
  7. Shred the Chicken and Thicken the Stew
  8. Remove chicken and shred it. Discard bay leaves. Whisk flour with cold broth or water until smooth and stir into the stew.
  9. Cook on HIGH uncovered for 20 to 30 minutes until the broth thickens.
  10. Taste, Adjust, and Serve
  11. Adjust seasoning to taste and serve with warm crusty bread or buttered dinner rolls.

Notes

  • Use chicken thighs for juiciness.
  • Yukon Gold potatoes hold shape better.
  • Do not lift the lid while cooking.
  • Make sure to whisk flour with cold liquid to avoid lumps.
