- 2 lbs boneless, skinless chicken thighs
- 4 medium Yukon Gold potatoes, peeled and cut into 1½-inch chunks
- 3 large carrots, peeled and cut into 1-inch rounds
- 3 stalks celery, sliced into 1-inch pieces
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and black pepper to taste
- 3 tablespoons all-purpose flour
- 1 tablespoon olive oil
- Fresh flat-leaf parsley, chopped, for garnish
Instructions
- Optional — Sear the Chicken for Deeper Flavor
- Pat the chicken thighs dry and season with salt and black pepper. Heat olive oil in a skillet and sear chicken for 3 minutes per side.
- Load the Slow Cooker
- Add onion, garlic, potato, carrot, and celery to the slow cooker. Stir tomato paste and Worcestershire sauce into chicken broth and pour over the chicken and vegetables.
- Slow Cook
- Cover and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours.
- Shred the Chicken and Thicken the Stew
- Remove chicken and shred it. Discard bay leaves. Whisk flour with cold broth or water until smooth and stir into the stew.
- Cook on HIGH uncovered for 20 to 30 minutes until the broth thickens.
- Taste, Adjust, and Serve
- Adjust seasoning to taste and serve with warm crusty bread or buttered dinner rolls.

- Use chicken thighs for juiciness.
- Yukon Gold potatoes hold shape better.
- Do not lift the lid while cooking.
