  • 1 teaspoon chili flakes

  • 1 cup natural yogurt
  • 2 tablespoons mayonnaise
  • 4 flatbreads
  • 1 cup small gem lettuce
  • 1 cucumber
  • 1 red pepper
  • 1 cup cherry tomatoes

Instructions

  1. Prepare the slow cooker by lightly oiling the bottom with olive oil.
  2. Add skinless, boneless chicken thighs into the slow cooker, ensuring they lie flat.
  3. Drizzle olive oil generously over the chicken.
  4. Squeeze fresh lemon juice over the chicken.
  5. Season the chicken with ground cumin, paprika, ground coriander, ground cinnamon, chili flakes, sea salt, and black pepper.
  6. Cover and cook on high for 3.5 to 4 hours until the chicken reaches 165°F and is tender.
  7. Mix natural yogurt, mayonnaise, and lemon juice to create the creamy yogurt dressing.
  8. Once cooked, shred the chicken into bite-sized pieces and serve in warm flatbreads with fresh veggies and yogurt dressing.
