This hearty Sloppy Joe Orzo recipe combines the classic flavors of a sloppy joe sandwich with tender orzo pasta for a comforting and flavorful one-pot meal.

- 1 pound lean ground beef
- 1/2 cup finely chopped yellow onion
- 4 cloves garlic, minced
- 1 and 1/2 cups dry orzo pasta
- 2 tablespoons packed light brown sugar
- 1 and 1/2 cups shredded cheddar cheese
- 4 tablespoons olive oil, divided
- 3 cups low-sodium beef broth
- 1 (15 ounce) can tomato sauce
- 1 (6 ounce) can tomato paste
- 1 tablespoon apple cider vinegar
- 1 tablespoon Worcestershire sauce
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the ground beef, season generously with salt and freshly ground black pepper, and crumble it as it cooks. Stir occasionally until the beef is cooked through and browned, about 10 minutes. Remove the cooked beef from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil and heat over medium-high. Add the finely chopped yellow onion and cook, stirring occasionally, until the onion begins to soften, approximately 5 minutes.
- Add the orzo pasta and minced garlic to the skillet with the onions. Cook, stirring frequently, until the orzo is lightly toasted and the garlic fragrant, about 2 minutes.
- Pour in the beef broth, tomato sauce, and tomato paste. Stir in the brown sugar, apple cider vinegar, and Worcestershire sauce to combine all ingredients. Bring the mixture to a boil, then reduce the heat to medium-low to maintain a gentle simmer. Stir often and let cook until the orzo is tender and the liquid has mostly absorbed, about 15 minutes.
- Lower the heat to low, then stir the cooked ground beef back into the skillet. Mix in the shredded cheddar cheese, stirring until the cheese has melted completely and the mixture is creamy and well combined.
- Sprinkle chopped fresh parsley over the dish for a burst of color and freshness. Serve hot as a satisfying main course.
