Ingredients

  • 2 (12 oz) Ribeye or New York strip steaks (about 1 1/4-inches thick)
  • 1 tsp kosher salt
  • 3/4 tsp freshly ground black pepper
  • 1 Tbsp vegetable oil
  • 2 Tbsp unsalted butter
  • 2 sprigs fresh thyme
  • 2 garlic cloves, peeled and smashed

Instructions

  1. Let steaks rest at room temperature for 30 minutes.
  2. Heat 1 tablespoon of vegetable oil in a 12-inch cast iron skillet over medium-high heat.
  3. Pat both sides of steaks dry with paper towels and season with kosher salt and black pepper.
  4. Place steaks into the hot skillet and press down with metal tongs.
  5. Cook until the bottom is browned, approximately 3 minutes.
  6. Flip steaks and cook for about 3 more minutes until internal temperature is about 10 degrees below desired doneness.
  7. Reduce heat to medium-low and add butter, smashed garlic, and thyme to the skillet.
  8. Tilt the pan and spoon butter over the steaks for about 1 additional minute.
  9. Transfer steaks to plates and let rest for 5 minutes before slicing.
  10. Slice and serve immediately.
