Ingredients
- 4 lamb loin chops (1–1.5 inches thick)
- 3 tablespoons olive oil
- Juice and zest of 1 lemon
- 4 garlic cloves, minced
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper flakes (optional)
- Kosher salt and freshly ground black pepper to taste
- ½ cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley or dill
- Lemon wedges for serving
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, rosemary, thyme, cumin, smoked paprika, and red pepper flakes. Season with salt and black pepper.
- Rub the marinade generously over the lamb loin chops. Cover and refrigerate for at least 1 hour, or up to 4 hours.
- Before cooking, let the marinated lamb chops sit at room temperature for 20–30 minutes.
- Heat a cast iron skillet or heavy-bottomed pan over medium-high heat until very hot.
- Add a touch of olive oil to the hot pan. Carefully lay in the lamb chops, searing for 4–5 minutes on the first side until a crust forms.
- Flip the lamb chops and cook for another 3–4 minutes for medium-rare (internal temperature of 130–135°F). Adjust cooking time for desired doneness.
- Transfer the cooked lamb chops to a plate, tent loosely with foil, and let rest for 5–7 minutes.
- Top the skillet lamb chops with crumbled feta, chopped parsley or dill, and serve with lemon wedges.
