  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  • ½ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley or dill

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, rosemary, thyme, cumin, smoked paprika, and red pepper flakes. Season with salt and black pepper.
  2. Rub the marinade generously over the lamb loin chops. Cover and refrigerate for at least 1 hour, or up to 4 hours.
  3. Before cooking, let the marinated lamb chops sit at room temperature for 20–30 minutes.
  4. Heat a cast iron skillet or heavy-bottomed pan over medium-high heat until very hot.
  5. Add a touch of olive oil to the hot pan. Carefully lay in the lamb chops, searing for 4–5 minutes on the first side until a crust forms.
  6. Flip the lamb chops and cook for another 3–4 minutes for medium-rare (internal temperature of 130–135°F). Adjust cooking time for desired doneness.
  7. Transfer the cooked lamb chops to a plate, tent loosely with foil, and let rest for 5–7 minutes.
  8. Top the skillet lamb chops with crumbled feta, chopped parsley or dill, and serve with lemon wedges.
