Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 2 ripe avocados (halved and pitted)
  • 1 lemon (juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • ¼ cup red onion (finely diced)
  • ¼ cup fresh cilantro (chopped)
  • Salt and pepper to taste
  • ½ teaspoon chili flakes (optional)
  • Tortilla chips or small lettuce leaves for serving

Instructions

  1. In a medium skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp, season with salt, pepper, and chili flakes, and cook for 2-3 minutes on each side until pink and opaque.
  4. Remove from heat and let cool slightly.
  5. In a mixing bowl, scoop the avocado flesh and mash lightly with a fork.
  6. Add lemon juice, red onion, and chopped cilantro, then season with salt and pepper, mixing until well combined.
  7. In small serving cups, spoon a layer of the avocado mixture at the bottom.
  8. Top with the cooked shrimp, arranging them nicely.
  9. Garnish each cup with a lemon wedge and extra cilantro if desired.
  10. Serve with tortilla chips or small lettuce leaves.
