- 2 ripe avocados (halved and pitted)
- 1 lemon (juiced)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- ¼ cup red onion (finely diced)
- ¼ cup fresh cilantro (chopped)
- Salt and pepper to taste
- ½ teaspoon chili flakes (optional)
- Tortilla chips or small lettuce leaves for serving
Instructions
- In a medium skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp, season with salt, pepper, and chili flakes, and cook for 2-3 minutes on each side until pink and opaque.
- Remove from heat and let cool slightly.
- In a mixing bowl, scoop the avocado flesh and mash lightly with a fork.
- Add lemon juice, red onion, and chopped cilantro, then season with salt and pepper, mixing until well combined.
- In small serving cups, spoon a layer of the avocado mixture at the bottom.
- Top with the cooked shrimp, arranging them nicely.
- Garnish each cup with a lemon wedge and extra cilantro if desired.
- Serve with tortilla chips or small lettuce leaves.
