  • 1 pound Shrimp, peeled and deveined
  • 1 bunch Asparagus, ends trimmed and cut into 12 inch pieces
  • 1 cup Mushrooms, sliced (button or shiitake)
  • 3 cloves Garlic, minced
  • 1 inch piece Ginger, grated
  • 3 tablespoons Soy Sauce, Halal-certified
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Vegetable Oil, for sautéing
  • Salt and Pepper, to taste
  • Chili Flakes, optional (For those who enjoy a little heat)
  • Sesame Seeds, optional (For garnish)

Instructions

  1. Start by washing and chopping the asparagus and mushrooms. Mince the garlic and grate the ginger so they’re ready to go.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the shrimp to the hot oil. Cook for about 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside.
  4. In the same pan, add the asparagus and mushrooms. Stir-fry for about 4-5 minutes until tender-crisp.
  5. Toss in the garlic and ginger, stirring for about 1 minute until fragrant.
  6. Return the shrimp to the skillet. Pour in the soy sauce and sesame oil, stirring well to combine. Cook for another 1-2 minutes. Season with salt, pepper, and chili flakes if using.
  7. Remove from heat, garnish with sesame seeds if desired, and serve hot.
