- 1 pound Shrimp, peeled and deveined
- 1 bunch Asparagus, ends trimmed and cut into 1–2 inch pieces
- 1 cup Mushrooms, sliced (button or shiitake)
- 3 cloves Garlic, minced
- 1 inch piece Ginger, grated
- 3 tablespoons Soy Sauce, Halal-certified
- 1 tablespoon Sesame Oil
- 2 tablespoons Vegetable Oil, for sautéing
- Salt and Pepper, to taste
- Chili Flakes, optional (For those who enjoy a little heat)
- Sesame Seeds, optional (For garnish)
Instructions
- Start by washing and chopping the asparagus and mushrooms. Mince the garlic and grate the ginger so they’re ready to go.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the shrimp to the hot oil. Cook for about 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside.
- In the same pan, add the asparagus and mushrooms. Stir-fry for about 4-5 minutes until tender-crisp.
- Toss in the garlic and ginger, stirring for about 1 minute until fragrant.
- Return the shrimp to the skillet. Pour in the soy sauce and sesame oil, stirring well to combine. Cook for another 1-2 minutes. Season with salt, pepper, and chili flakes if using.
- Remove from heat, garnish with sesame seeds if desired, and serve hot.
