Shrimp Aguachile is a refreshing Mexican dish that combines succulent shrimp marinated in zesty lime juice with spicy chilies and crisp vegetables.

- 1 lb large shrimp, peeled and deveined
- ½ cup freshly squeezed lime juice (about 4–5 limes)
- 2 serrano peppers, finely chopped (adjust to taste)
- 1 medium cucumber, thinly sliced
- ½ red onion, thinly sliced
- 2 tbsp olive oil
- ¼ cup fresh cilantro, chopped
- Salt to taste
Instructions
- In a mixing bowl, whisk together lime juice, chopped chili peppers, and salt to create the marinade.
- Add shrimp to the marinade, ensuring they are fully submerged. Cover and refrigerate for 15-20 minutes until shrimp turn pink and opaque.
- While the shrimp marinate, slice cucumber and red onion. Set aside.
- After marinating, drain excess marinade (reserve some for drizzling). In a large bowl, combine shrimp with veggies, cilantro, and olive oil.
- Toss gently to mix; adjust seasoning with more lime juice or salt if needed.
- Serve chilled on a platter or in bowls with reserved marinade drizzled on top and garnish with lime wedges.
