Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ½ cup freshly squeezed lime juice (about 45 limes)
  • 2 serrano peppers, finely chopped (adjust to taste)
  • 1 medium cucumber, thinly sliced
  • ½ red onion, thinly sliced
  • 2 tbsp olive oil
  • ¼ cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. In a mixing bowl, whisk together lime juice, chopped chili peppers, and salt to create the marinade.
  2. Add shrimp to the marinade, ensuring they are fully submerged. Cover and refrigerate for 15-20 minutes until shrimp turn pink and opaque.
  3. While the shrimp marinate, slice cucumber and red onion. Set aside.
  4. After marinating, drain excess marinade (reserve some for drizzling). In a large bowl, combine shrimp with veggies, cilantro, and olive oil.
  5. Toss gently to mix; adjust seasoning with more lime juice or salt if needed.
  6. Serve chilled on a platter or in bowls with reserved marinade drizzled on top and garnish with lime wedges.
