Delicious Sheet Pan Tacos for Easy Weeknight Dinners

- 1 lb Ground Beef
- 1 packet Taco Seasoning (or homemade with chili powder, cumin, garlic powder, and paprika)
- 8 Flour or Corn Tortillas (or gluten-free tortillas or lettuce wraps)
- 1 cup Shredded Cheese
- 1 cup Diced Tomatoes
- 1 Avocado
- 1/2 cup Sour Cream
- 1/4 cup Fresh Cilantro
- 1 Bell Pepper, sliced
- 1 Onion, sliced
- Optional: Jalapeños, Olives, Salsa, Zucchini, Mushrooms
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula for about 5-7 minutes.
- Drain any excess fat and stir in the taco seasoning along with about ¼ cup of water. Let it simmer for a few minutes until thickened.
- Line a large sheet pan with parchment paper or lightly grease it. Spread the cooked beef evenly across the pan.
- Scatter sliced bell peppers and onions over the beef, adding any other veggies you enjoy.
- Place the sheet pan in the oven and bake for 15-20 minutes, or until the veggies are tender and slightly charred.
- While the filling is baking, warm your tortillas in a separate pan or in the microwave wrapped in a damp paper towel for about 30 seconds.
- Once the filling is ready, remove the sheet pan from the oven. Spoon the beef and vegetable mixture onto the warm tortillas and top with your favorite toppings.
- Enjoy your Sheet Pan Tacos right away with sides like chips and salsa or a fresh salad!
