Ingredients

  • 1.5 lb large shrimp (peeled)
  • 1 bunch fresh asparagus
  • 4 tbsp olive oil (divided)
  • 5 cloves garlic (minced)
  • 1 whole red onion (sliced)
  • 0.5 tbsp oregano
  • 0.5 tbsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp ground black pepper (to taste)
  • 1 whole lemon (juiced)
  • 1 cup black olives (pitted)
  • 1 cup feta cheese
  • 0.33 cup fresh cilantro or parsley (for garnish)

Instructions

  1. Preheat your oven to 450°F.
  2. Combine the shrimp in a large bowl with 2 tablespoons of olive oil, minced garlic, salt, black pepper, smoked paprika, oregano, and lemon juice. Toss well to coat the shrimp evenly.
  3. Prepare the asparagus by trimming and washing it thoroughly. Lay the fresh spears flat on a baking sheet, seasoning them with 1 tablespoon of olive oil.
  4. Layer the seasoned shrimp on top of the asparagus, then add the sliced red onions.
  5. Bake the dish in the middle rack of the oven for about 10 minutes until the shrimp are golden brown.
  6. Garnish with crumbled feta cheese, black olives, and fresh cilantro or parsley. Drizzle the remaining olive oil over the top.
