- 1.5 lb large shrimp (peeled)
- 1 bunch fresh asparagus
- 4 tbsp olive oil (divided)
- 5 cloves garlic (minced)
- 1 whole red onion (sliced)
- 0.5 tbsp oregano
- 0.5 tbsp smoked paprika
- 1 tsp sea salt
- 1 tsp ground black pepper (to taste)
- 1 whole lemon (juiced)
- 1 cup black olives (pitted)
- 1 cup feta cheese
- 0.33 cup fresh cilantro or parsley (for garnish)
Instructions
- Preheat your oven to 450°F.
- Combine the shrimp in a large bowl with 2 tablespoons of olive oil, minced garlic, salt, black pepper, smoked paprika, oregano, and lemon juice. Toss well to coat the shrimp evenly.
- Prepare the asparagus by trimming and washing it thoroughly. Lay the fresh spears flat on a baking sheet, seasoning them with 1 tablespoon of olive oil.
- Layer the seasoned shrimp on top of the asparagus, then add the sliced red onions.
- Bake the dish in the middle rack of the oven for about 10 minutes until the shrimp are golden brown.
- Garnish with crumbled feta cheese, black olives, and fresh cilantro or parsley. Drizzle the remaining olive oil over the top.
