- 4 pieces chicken breasts (Boneless and skinless)
- 2 pieces zucchinis, sliced
- 1 piece red bell pepper, chopped
- 1 piece yellow bell pepper, chopped
- 1 piece red onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Gather all the necessary ingredients and wash your vegetables.
- Slice the zucchinis, chop the bell peppers, and slice the red onion ensuring even sizes.
- Mince the garlic cloves finely.
- In a large bowl, mix together the chicken breasts, sliced zucchinis, chopped bell peppers, sliced red onion, and minced garlic.
- Drizzle with olive oil and add the dried oregano, dried thyme, salt, and pepper.
- Toss all the ingredients until well-coated.
- Spread the mixture evenly on a sheet pan in a single layer.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
- Check for doneness using a meat thermometer to ensure chicken is at least 165°F (75°C).
- Remove from oven and let it cool for a few minutes before serving.
