Ingredients

  • 4 pieces chicken breasts (Boneless and skinless)
  • 2 pieces zucchinis, sliced
  • 1 piece red bell pepper, chopped
  • 1 piece yellow bell pepper, chopped
  • 1 piece red onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Gather all the necessary ingredients and wash your vegetables.
  3. Slice the zucchinis, chop the bell peppers, and slice the red onion ensuring even sizes.
  4. Mince the garlic cloves finely.
  5. In a large bowl, mix together the chicken breasts, sliced zucchinis, chopped bell peppers, sliced red onion, and minced garlic.
  6. Drizzle with olive oil and add the dried oregano, dried thyme, salt, and pepper.
  7. Toss all the ingredients until well-coated.
  8. Spread the mixture evenly on a sheet pan in a single layer.
  9. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
  10. Check for doneness using a meat thermometer to ensure chicken is at least 165°F (75°C).
  11. Remove from oven and let it cool for a few minutes before serving.
