- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 2 cups cherry tomatoes
- 1/2 cup artichoke hearts
- 1 lemon
- 2 large chicken breasts
- 2 cloves garlic
- 1/4 cup olive oil
- 1 1/2 tbsp balsamic vinegar
- 1/2 tsp smoked paprika
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/2 tsp pepper
- 2 tbsp chopped fresh basil
- 2/3 cup kalamata olives
- 1/4 cup chopped feta (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare your baking sheet with chopped peppers, red onion, artichoke hearts, lemon wedges, and cherry tomatoes.
- Whisk together garlic, olive oil, balsamic vinegar, smoked paprika, oregano, salt, and pepper. Pour 1/3 of the sauce over veggies, tossing gently.
- Add chicken pieces on top of the vegetables and brush with remaining sauce. Bake for 25 minutes.
- After 25 minutes, sprinkle feta, chopped basil, and kalamata olives. Drizzle remaining sauce and return to oven for another 5-10 minutes.
- Ensure chicken is no longer pink and garnish with more fresh basil before serving.
