Ingredients

  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 2 cups cherry tomatoes
  • 1/2 cup artichoke hearts
  • 1 lemon
  • 2 large chicken breasts
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1/2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp chopped fresh basil
  • 2/3 cup kalamata olives
  • 1/4 cup chopped feta (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare your baking sheet with chopped peppers, red onion, artichoke hearts, lemon wedges, and cherry tomatoes.
  3. Whisk together garlic, olive oil, balsamic vinegar, smoked paprika, oregano, salt, and pepper. Pour 1/3 of the sauce over veggies, tossing gently.
  4. Add chicken pieces on top of the vegetables and brush with remaining sauce. Bake for 25 minutes.
  5. After 25 minutes, sprinkle feta, chopped basil, and kalamata olives. Drizzle remaining sauce and return to oven for another 5-10 minutes.
  6. Ensure chicken is no longer pink and garnish with more fresh basil before serving.
