Savory Senegalese Peanut Stew to Warm Your Soul
Ingredients
Scale
- 2 lbs stew beef (use cuts like chuck for tenderness)
- ½ cup peanut butter (this adds creaminess and essential flavor)
- 1 piece red bell pepper (chopped for a sweet, vibrant crunch)
- 2 tablespoons tomato paste (enhances the stew’s depth and richness)
- 1 piece onion (finely chopped for a flavorful base)
- 1 tablespoon beef bouillon powder (enhances the savory notes of the stew)
- 1 teaspoon cayenne pepper (adjust according to your spice preference)
- ¼ cup olive oil (for sautéing the beef to perfection)
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (adds warmth to the overall taste)
- 1 cup water (helps balance the thickness of the stew)
- 2 cups stock/broth (for a rich and hearty base)
- pinch salt (helps to brown the beef beautifully)
Instructions
- Prepare the Beef: Start by washing the stew beef and cutting it into smaller, bite-sized pieces.
- Heat the Oil: Pour the olive oil into a large pan or Dutch oven set over medium heat. Let it warm up until it’s shimmering.
- Sauté the Meat: Add the beef along with the black pepper and a pinch of salt to the pan. Sauté for about 8-10 minutes, until browned.
- Chop Veggies: While the beef is cooking, chop the onion and red bell pepper.
- Add Veggies: Toss the chopped onions and red bell pepper into the pan with the beef. Sauté for an additional 3 minutes.
- Incorporate Tomato Paste: Stir in the tomato paste, mixing it well with the beef and veggies. Cook for about 5 minutes.
- Pour in Broth: Add the water, stock, beef bouillon powder, cayenne pepper, and salt to taste.
- Bring to a Boil: Increase the heat to bring the mixture to a boil. Cook for another 5 minutes.
- Add Peanut Butter: Stir in the peanut butter until fully dissolved into the mixture.
- Thicken the Stew: Allow the stew to simmer and thicken for about 2-5 minutes.
- Serve and Enjoy: Dish out the stew into bowls and pair it with cauliflower rice or your favorite grain.
