  • 1 cup cheddar cheese (shredded)
  • 8 strips bacon (thick-sliced)
  • 1 pound shrimp (peeled and deveined (3140 per pound))
  • 3 cloves garlic (minced)
  • 1 teaspoon Cajun or blackened seasoning
  • 4 green onions (chopped)

Instructions

  1. In a large saucepan, bring 2 cups of chicken broth, 2 cups of milk, 1/3 cup cubed butter, 3/4 teaspoon salt, and 1/2 teaspoon pepper to a boil. Once boiling, slowly stir in 3/4 cup of old-fashioned grits.
  2. Reduce the heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the mixture thickens and the grits are tender.
  3. Stir in 1 cup of shredded cheddar cheese until melted and blended perfectly into the grits.
  4. In a large skillet, cook 8 chopped bacon strips over medium heat until crispy. Reserve 4 teaspoons of the drippings in the skillet.
  5. Add 1 pound of peeled and deveined shrimp, 3 minced garlic cloves, and 1 teaspoon of Cajun or blackened seasoning to the hot drippings. Sauté until the shrimp turn pink, about 3-4 minutes.
  6. Stir in the crispy bacon and heat everything through for an additional minute.
  7. Spoon the creamy grits into bowls, top with the flavorful shrimp mixture, and sprinkle with 4 chopped green onions.
  8. A squeeze of lemon juice adds a delightful zesty contrast.
