Description
These mini beef meatloaves are a quick, flavorful comfort meal that cooks faster than traditional meatloaf and offers perfect individual portions.

- 1.5 pounds (680g) ground beef (80/20)
- 3/4 cup (90g) breadcrumbs (plain or panko)
- 1/3 cup (80ml) milk (whole or 2%)
- 1 large egg (room temperature)
- 1/2 cup (75g) finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian seasoning (or mix of oregano, basil, thyme)
- 1/2 cup (120ml) ketchup
- 1 tablespoon brown sugar
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or oil.
- Heat 1 tablespoon oil in a skillet over medium heat. Add finely chopped onion and cook until translucent, about 3 minutes. Add minced garlic and cook for 1 more minute. Set aside to cool.
- In a large bowl, combine breadcrumbs and milk. Let sit for 2 minutes until milk is absorbed and breadcrumbs are soft.
- Add ground beef, sautéed onion and garlic, egg, Worcestershire sauce, salt, pepper, and Italian seasoning to breadcrumb mixture. Gently mix until just combined; avoid overmixing.
- In a small bowl, mix ketchup and brown sugar until smooth to make the glaze.
- Divide meat mixture evenly among muffin cups, pressing into mini loaf shapes about 3/4 inch tall. Spread a dollop of ketchup glaze on top of each.
- Bake for 30 minutes or until internal temperature reaches 160°F (71°C) and tops are caramelized.
- Let mini meatloaves rest in the tin for 5 minutes before removing and serving.
