Description

A quick and easy low-carb skillet recipe combining ground beef and fresh spinach, perfect for keto meals and meal prep.


Ingredients

  • 1 lb ground beef (80/20 preferred)
  • 5 cups fresh baby spinach (about 150g)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • ½ cup diced onion (about 80g)
  • 1 tbsp tomato paste
  • ¼ cup beef broth
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Preheat your skillet over medium-high heat and add olive oil until shimmering.
  2. Sauté diced onions until translucent, about 3 minutes, then add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef, breaking it up with a spoon, and cook until browned with no pink remaining, about 7-8 minutes. Drain excess fat if using lean beef.
  4. Stir in tomato paste, smoked paprika, oregano, salt, black pepper, and red pepper flakes if using. Cook for 2 minutes to meld flavors and slightly caramelize the tomato paste.
  5. Pour in beef broth, scraping up browned bits from the pan, and simmer for 3 minutes to reduce slightly.
  6. Add fresh spinach in batches, stirring to wilt before adding more. Once all spinach is incorporated and bright green, cook for another 1-2 minutes.
  7. Taste and adjust seasoning as needed. Serve hot directly from the skillet.
