A quick and easy low-carb skillet recipe combining ground beef and fresh spinach, perfect for keto meals and meal prep.

- 1 lb ground beef (80/20 preferred)
- 5 cups fresh baby spinach (about 150g)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- ½ cup diced onion (about 80g)
- 1 tbsp tomato paste
- ¼ cup beef broth
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
- ¼ tsp red pepper flakes (optional)
Instructions
- Preheat your skillet over medium-high heat and add olive oil until shimmering.
- Sauté diced onions until translucent, about 3 minutes, then add minced garlic and cook for 30 seconds until fragrant.
- Add ground beef, breaking it up with a spoon, and cook until browned with no pink remaining, about 7-8 minutes. Drain excess fat if using lean beef.
- Stir in tomato paste, smoked paprika, oregano, salt, black pepper, and red pepper flakes if using. Cook for 2 minutes to meld flavors and slightly caramelize the tomato paste.
- Pour in beef broth, scraping up browned bits from the pan, and simmer for 3 minutes to reduce slightly.
- Add fresh spinach in batches, stirring to wilt before adding more. Once all spinach is incorporated and bright green, cook for another 1-2 minutes.
- Taste and adjust seasoning as needed. Serve hot directly from the skillet.
