- 2 cups cooked shredded chicken (rotisserie, grilled, or baked)
- 1/4 cup hot honey (or honey mixed with a pinch of cayenne)
- 1/3 cup BBQ sauce (smoky and tangy, e.g., Sweet Baby Ray’s)
- 6 large flour tortillas
- 2 cups shredded cheese blend (sharp cheddar and mozzarella)
- 1/2 small red onion, thinly sliced (optional)
- 1/4 cup fresh cilantro, chopped
- Butter or olive oil for cooking
- Salt and pepper to taste
Instructions
- In a mixing bowl, toss shredded chicken with hot honey and BBQ sauce. Season with salt and pepper.
- Heat a large skillet over medium heat. Add about 1 teaspoon butter or olive oil and coat the surface.
- Place one flour tortilla flat in the skillet. Sprinkle about 1/3 cup cheese blend evenly over half the tortilla.
- Add a layer of the hot honey BBQ chicken on top of the cheese, followed by thinly sliced red onions if using. Top with a little more cheese.
- Fold the tortilla over to cover the filling.
- Cook undisturbed for about 4 minutes until the bottom is golden and crispy.
- Carefully flip the quesadilla and cook the other side for another 4-5 minutes until golden and cheese is melted.
- Repeat with remaining tortillas and filling.
- Let cooked quesadillas rest for 1-2 minutes before slicing into wedges.
- Sprinkle chopped fresh cilantro on top and serve immediately with your favorite dipping sauces.
