- 2/3 cup all-purpose flour
- 2/3 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 tablespoons unsalted butter
- 2 oz baby bella mushrooms
- 1/2 cup cooked breakfast sausage
- 1 cup shredded cheddar cheese
- 3 chives
Instructions
- Preheat your oven to 425°F (220°C) and place a 10-inch cast iron skillet inside with 4 tablespoons of butter. Let it melt as the oven warms up.
- Blend together the eggs, flour, milk, salt, and pepper in a blender on high for 30–45 seconds until smooth. Allow it to rest while preparing the filling.
- Pour the batter into the hot skillet with melted butter, spreading it evenly. Scatter the thinly sliced mushrooms and cooked sausage on top.
- Bake in the oven for 12 minutes. The batter will rise beautifully.
- Sprinkle the shredded cheddar cheese evenly over the top and return to the oven for another 8–10 minutes until the cheese is melted and edges are golden brown.
- Garnish with freshly chopped chives and serve immediately.
